- Preheat the oven to 190 degrees and line a quiche tin with the wholemeal puff pastry.
- Roast the sweet potato for 15 minutes in the oven until soft.
- Wilt the spinach in a pan with the garlic and squeeze out the moisture.
- Whisk the eggs together with the quark, nutmeg, pepper and salt.
- Distribute the sweet potato and spinach over the base, pour the egg mixture over and sprinkle the cheese on top.
- Bake for 25 minutes until golden brown and let cool before slicing.
