Wholegrain bowl with prawns and edamame

This wholegrain bowl with prawns and edamame is a complete, balanced meal with an Asian twist. Sweet prawns, al dente edamame, grated carrot and fine red cabbage are mixed with wholegrain and finished with a dressing of sesame oil, soy sauce and lime juice, sprinkled with sesame seeds. Nutritious, colourful and bursting with flavour.

In Phase 4 of the protein diet, it's all about maintenance and striking a lasting balance between protein and carbohydrates. The prawns and edamame together provide well over 36 grams of protein, whilst the wholegrain contributes slow carbohydrates and fibre and the vegetables provide extra volume. This protein-rich bowl is therefore an ideal example of the varied, wholesome meals you want to maintain in the maintenance phase.

Lovely with a pinch of chilli flakes or a spoonful of kimchi for bite. A little fresh coriander and an extra squeeze of lime make the bowl even fresher.

  1. Heat the sesame oil and fry the prawns for 3 to 4 minutes until cooked.
  2. Cook the edamame briefly until tender-crisp.
  3. Mix the wholegrain with carrot and red cabbage.
  4. Divide the mixture over a bowl and top with the prawns and edamame.
  5. Mix soy sauce with lime juice and drizzle over, sprinkle with sesame seeds.

Bewaren

Keeps for up to 2 days covered in the fridge; store the dressing separately and mix it in only when serving so the vegetables stay crispy.

Variatietips

Why not swap the prawns for tofu cubes or strips of chicken, and the wholemeal pasta for brown rice or soba. A spoonful of peanut sauce gives the bowl a richer, more satisfying flavour.
