White fish curry with brown rice

Phase 3 dinner: mild white fish curry with coconut and spinach on brown rice, protein-rich with wholemeal carbs in moderation.

This white fish curry with brown rice is a fragrant, mild dish that fills the kitchen with warm aromas. Chunks of cod or pollock gently braise in a creamy sauce of red curry paste and coconut milk, with spinach weaving through towards the end. Served on nutty brown rice, it becomes a comforting, satisfying meal.

For Phase 3 of the protein diet, where wholemeal carbohydrates return in moderation, this curry is a perfect choice. With 35 grams of protein from the white fish and 42 grams of carbohydrates from the brown rice, you're in a lovely balance. The lean protein and fibre-rich wholemeal rice keep you satisfied for longer, whilst light coconut milk keeps things creamy but light.

Lovely with a squeeze of lime juice and some fresh coriander just before serving. A pinch of chilli flakes or a spoonful of yoghurt alongside gives the curry that little bit extra.

  1. Cook the brown rice according to the packet instructions.
  2. Sauté the onion in olive oil until translucent and stir through the curry paste.
  3. Add the coconut milk and simmer gently for 3 minutes.
  4. Place the white fish pieces in the sauce and cook gently for 6 to 8 minutes.
  5. Stir through the spinach until it has wilted.
  6. Serve the curry over the rice.

Bewaren

Store the curry and rice covered for up to two days in the fridge. Warm the curry gently so the white fish stays whole and doesn't fall apart.

Variatietips

Try swapping the spinach for green beans or broccoli florets for more bite. A handful of prawns alongside the fish makes it a richer seafood curry.
