White bean soup with chicken and thyme
Protein-rich Phase 2 soup with white beans, shredded chicken and fragrant thyme.
This white bean soup with chicken and thyme is a hearty, filling lunch that carries you easily through the afternoon. By pureeing part of the soup, you get a nice bound texture, whilst whole white beans, shredded chicken and soft vegetables provide bite. Fresh thyme gives the soup a warm, spiced aroma.
In Phase 2, you can carefully add slow carbohydrates back in, and white beans do this in the loveliest way: they provide fibre and slow-release energy without spikes. Combined with the protein-rich chicken, you get a well-balanced dish that satisfies for a long time and fits perfectly into a protein diet where protein and complex carbohydrates go hand in hand.
Lovely with a pinch of freshly ground pepper and a few fresh thyme leaves as garnish. A spoonful of pesto or a splash of olive oil just before serving rounds off the flavour beautifully.

- Fry the onion, carrot and celery for a few minutes in a soup pan.
- Add the stock and thyme and cook for 15 minutes.
- Blend a third of the soup to create a bound texture.
- Stir through the beans and chicken and warm through for 5 minutes.
- Season with pepper and salt and serve.
