This Vietnamese beef bowl with edamame is a fresh, colourful lunch you can throw together in a jiffy. Strongly seared beef chunks sit on a bed of cucumber, carrot ribbons and bean sprouts, finished with fresh mint, coriander and a light dressing of tamari and lime. A sprinkle of chopped peanuts gives just that nutty crunch.
In Phase 2, you can have a bit more carbs on your plate, and this bowl makes clever use of that. The lean beef and edamame together deliver a hefty dose of protein for muscle maintenance and satisfaction, whilst the edamame and veg provide fibre and a controlled amount of carbs. A well-balanced choice within a high-protein diet that still feels light.
Lovely with an extra lime wedge on the side or a few Thai basil leaves. If you fancy more, add a small portion of rice noodles.

- Fry the sirloin tip pieces in the sesame oil for 3 minutes over high heat until browned.
- Cook or steam the edamame for 3 minutes and drain.
- Divide the cucumber, carrot and bean sprouts between bowls.
- Place the beef and edamame on top.
- Mix the tamari with lime juice and drizzle over the bowl.
- Finish with mint, coriander and peanuts.
