Turkish menemen is the kind of breakfast that gets your day off to a great start. Creamy scrambled eggs simmer together with ripe tomato, green pepper and mild spices into a savoury whole with a lightly sweet undertone. A pinch of paprika powder and fresh parsley give it that recognisable Turkish warmth, straight from the pan onto your plate.
For Phase 1 menemen is a clever start because it's about protein and very few carbohydrates. The three eggs deliver around twenty-five grams of protein that keeps you satisfied through the morning, whilst tomato and pepper add flavour and volume without pushing carbohydrates up. So this savoury breakfast is a pleasant way to get your high-protein diet off to a good start early in the day.
Nice with a thin slice of smoked salmon on the side, a handful of rocket or some crumbled feta for an extra salty note.

- Heat the olive oil and sauté the onion and pepper for four minutes until soft.
- Add the tomato and paprika powder and stew for five minutes until you have a thick sauce.
- Beat the eggs and pour them over the vegetables.
- Stir gently until the eggs are just set but still creamy.
- Sprinkle with parsley, salt and pepper and serve immediately.
