Wholegrain pasta with turkey mince and tomato sauce is a trusted classic in lighter clothing. Onion and garlic form the base for a rich tomato sauce made from passata, in which the lean turkey mince simmers crumbly with Italian herbs. The sauce thickens nicely and coats the wholegrain pasta, finished with grated Parmesan and fresh basil for a full, savoury plate.

For Phase 4, the maintenance phase of the protein diet, this is a balanced and familiar dinner. The turkey mince brings around thirty-seven grams of protein per serving and keeps the dish distinctly protein-rich, whilst the wholegrain pasta provides slow carbohydrates and extra fibre. That combination gives a pleasant, long-lasting fullness and makes this pasta a meal you can eat with a clear conscience.

  1. Cook the wholegrain pasta until al dente according to the packet instructions.
  2. Fry the onion and garlic and brown the turkey mince.
  3. Add the passata and Italian herbs and simmer for 10 minutes.
  4. Season with salt and pepper.
  5. Stir the drained pasta through the sauce.
  6. Divide onto plates and sprinkle with Parmesan and basil.

Bewaren

Keep the sauce separate from the pasta in the fridge for up to three days for the best texture. Reheat the sauce gently and cook the pasta fresh if you like.

Variatietips

Stir a handful of spinach or some halved cherry tomatoes through the sauce, or swap the Parmesan for pecorino for a slightly sharper kick.
