Mild turkey and lentil curry

Mild turkey and lentil curry is a comforting one-pan meal packed with warm spices. Onion and garlic are fried with turmeric curry, then the turkey mince cooks through crumbly and red lentils simmer gently in coconut milk. The lentils break down beautifully and bind the curry into a creamy, savoury sauce that is gentle in flavour but rich in texture.

In Phase 2 of the protein diet, protein and healthy carbohydrates complement each other perfectly, and this curry does exactly that. The turkey mince delivers over forty grams of protein per serving, whilst the red lentils provide plant-based protein, fibre and slow carbohydrates. Together they deliver a hearty, long-lasting fullness that makes this protein-rich curry a satisfying Phase 2 dinner.

Lovely with a spoonful of full-fat yoghurt and extra fresh coriander sprinkled over. A few strips of cucumber on the side provide a fresh, cool contrast to the warm spices.

  1. Fry the onion and garlic with the turmeric powder in a large pan.
  2. Add the turkey mince and fry until crumbly.
  3. Stir through the lentils, coconut milk and water.
  4. Simmer gently for 18 to 20 minutes until the lentils are tender.
  5. Season with salt.
  6. Serve with fresh coriander.

Bewaren

Store the curry covered in the fridge for up to four days; the flavour actually becomes richer after a day. Reheat gently and stir through a splash of water if needed.

Variatietips

Add a handful of spinach or some diced pumpkin for extra veg, or swap the turkey for minced chicken for a similar result.
