These turkey meatballs in tomato and paprika sauce are hearty, filling and full of flavour. Tender meatballs made from lean turkey mince simmer gently in a fragrant sauce of sieved tomatoes, sweet paprika and oregano. The result is a comforting dinner that leaves you wanting more.

Why this recipe fits Phase 1: in this phase the focus is on plenty of protein and few carbohydrates, and with thirty-two grams of protein per serving, the turkey mince provides an excellent, lean base for that. The sauce adds flavour and volume without pushing the carbohydrates up, whilst the protein ensures a long-lasting feeling of fullness. This keeps it a hearty yet high-protein dish within the protein diet.

Complete it with a bed of courgette ribbons or steamed broccoli instead of pasta. A sprinkle of fresh basil just before serving makes the sauce extra fragrant.

  1. Mix the turkey mince with the egg, salt and pepper and roll into small balls.
  2. Brown the meatballs on all sides in the olive oil and remove from the pan.
  3. Lightly fry the onion and bell pepper in the same pan.
  4. Add the passata and oregano and bring to the boil.
  5. Return the meatballs and simmer gently for 12 minutes until cooked through.

Bewaren

The meatballs in sauce keep well covered in the fridge for three days and freeze beautifully for up to three months. Reheat them gently over a low heat.

Variatietips

Replace the turkey mince with lean chicken mince or a vegetarian variant based on lentils. Add a finely chopped red pepper for a spicy sauce.
