Turkey fillet with sweet potato from the oven is a heartwarming traybake with minimal washing up. Chunks of sweet potato are roasted first with rosemary until sweet and soft, then lean turkey fillet and wedges of red onion are roasted alongside. Everything comes golden brown and fragrant from the oven, with earthy rosemary threading through the dish.
For Phase 3 of the protein diet, this is a nicely balanced dinner. The turkey fillet delivers almost forty grams of lean protein per serving, whilst the sweet potato provides slow, nourishing carbohydrates that make a comeback in Phase 3. The combination of protein and slow carbohydrates gives a stable, long-lasting fullness without spikes, precisely what this phase requires.
Lovely with a fresh green salad or a spoonful of spiced quark alongside. A pinch of smoked paprika over the warm plate adds just that extra bit of depth.

- Preheat the oven to 210 degrees.
- Mix the sweet potato with half the oil and the rosemary and spread on the baking sheet.
- Roast the sweet potato for 10 minutes first.
- Mix the turkey with the remaining oil and paprika powder.
- Add the turkey and onion to the sheet.
- Roast for another 20 minutes until everything is cooked and golden brown.
