Tuna Salad with White Beans and Celery

Hearty protein-rich salad with tuna and a handful of white beans, ideal as a combo lunch in Phase 2.

This tuna salad with white beans and celery is a hearty, fresh lunch without the fuss. Lean tinned tuna is made creamy with Greek yoghurt and mustard, whilst white beans and crispy celery turn it into a proper protein-rich meal that fits nicely into your protein diet.

In Phase 2 pulses have a place again, and this salad shows how well that works. The white beans add plant-based proteins and fibre that extend satisfaction considerably, whilst the tuna delivers a hefty dose of animal protein. The carbs stay modest, so you stay neatly within the combo phase.

Lovely with a few wholemeal crackers or on a bed of rocket. A splash of lemon juice and some extra parsley make this salad fresh and complete.

  1. Mix the Greek yoghurt, mustard, lemon juice, pepper and salt in a bowl.
  2. Stir the drained tuna and white beans through.
  3. Add the celery and gently toss everything together.
  4. Sprinkle with the chopped parsley and serve immediately or lightly chilled.

Bewaren

Store the salad covered for a maximum of 2 days in the fridge. The flavour develops nicely, so it's often even better the next day. Give it a stir before serving.

Variatietips

Swap the tuna for a tin of salmon or hard-boiled egg, or add capers and red onion for extra kick. Kidney beans or chickpeas work just as well as the white beans.
