Tuna salad with egg and capers

This tuna salad with egg and capers is a savoury classic dressed up in a protein-rich jacket. Creamy tuna, hard-boiled egg, piquant capers and fresh red onion sit on a bed of mixed leaves, finished with a splash of lemon juice. Hearty, flavourful and ready in no time.

For Phase 1 of the protein diet, this is an ideal lunch: tuna and egg together form a powerful protein bomb of around 35 grams, whilst the dish remains well within the strict phase limits with just 4 grams of carbohydrates. The eggs and healthy fats provide lasting satiety, so you won't find yourself reaching for a snack mid-afternoon.

Lovely with a few slices of cucumber or a handful of rocket mixed through for extra freshness. A pinch of smoked paprika over the egg brings this protein-rich salad to a slightly peppery level.

  1. Cook the eggs for 8 minutes until hard-boiled, cool under cold water and peel.
  2. Mix the drained tuna with mayonnaise, lemon juice and pepper.
  3. Arrange the salad leaves on a plate and top with the tuna.
  4. Halve the eggs and place them alongside.
  5. Sprinkle capers and red onion over the salad.

Bewaren

Keeps for up to 2 days covered in the fridge; store the cooked eggs unpeeled and halve them just before serving for the best texture.

Variatietips

Swap the tuna for cooked chicken strips or tinned salmon instead. A spoonful of Greek yoghurt mixed into the mayonnaise makes the salad lighter and even more protein-rich.
