Tuna-cucumber crackers

Tuna-cucumber crackers are a fresh, crispy snack bite that tastes light yet satisfying. On a wholemeal cracker comes a layer of creamy tuna salad with quark, mustard and chives, topped with thin slices of cucumber for a cool crunch. A simple snack that's ready for the table in a few minutes.

In Phase 2 of a protein diet, there's room for a little healthy carbohydrates, and these crackers make clever use of that. The tuna and lean quark together deliver a solid serving of protein that feeds your muscles and gives you a longer feeling of satisfaction, whilst the wholemeal cracker provides slow-release carbohydrates and fibre. That balance between protein and modest carbohydrates makes it a high-protein snack that fits well with the balanced approach of this phase.

Lovely with some extra chives, a few cherry tomatoes or a fresh salad of mixed leaves alongside. Also handy as a quick, high-protein lunch on a busy day.

  1. Mix the drained tuna with the quark, mustard and chives.
  2. Season the tuna salad with salt and pepper.
  3. Place a few thin slices of cucumber on each wholemeal cracker.
  4. Spoon a dollop of tuna salad onto the cucumber.
  5. Garnish with extra chives and serve straight away.

Bewaren

Top the crackers just before serving, otherwise they become soft. Store the tuna salad covered in the fridge and use it within two days.

Variatietips

Replace the tuna with cooked chicken or smoked mackerel for a different protein source. A thin slice of radish or a pinch of paprika powder gives the crackers extra freshness and colour.
