This tofu chickpea traybake with veg goes in an oven tray and means minimal washing up. Tofu and chickpeas turn crispy on the outside, whilst courgette, peppers and red onion come out sweet and roasted for a complete, fragrant meal.

Tofu and chickpeas together provide well over twenty-five grams of plant-based protein per serving, plus fibre, which ensures lasting fullness, whilst the veg adds considered carbohydrates and plenty of colour.   1. Preheat the oven to 200 degrees.
  2. Mix the tofu, chickpeas and veg with olive oil and paprika powder.
  3. Spread everything over a baking tray with baking paper.
  4. Roast for 28 minutes and stir halfway through.
  5. Season with salt and pepper and serve warm.

Bewaren

Store leftovers in the fridge once cooled, for up to 3 days. Warm through in the oven or air fryer so the tofu and chickpeas become crispy again.

Variatietips

Try swapping the courgette for pumpkin or add broccoli florets. A pinch of za'atar or ras el hanout gives the traybake a spicy twist.
