Thai chicken soup with lime and ginger is an aromatic, clear soup that's ready in a quarter of an hour. Fresh ginger and red chilli give the broth instant character, whilst a splash of coconut milk makes the soup just creamy enough. The lime juice adds a fresh, zingy finish at the last moment that lifts all the flavours.
For Phase 1 of the protein diet, this chicken soup is a wise choice. The lean chicken fillet provides over thirty grams of protein per serving and keeps the dish distinctly protein-rich, whilst carbohydrates stay very low at just a handful per bowl. The warm broth and the protein together create a pleasant sense of fullness, ideal for a light but nourishing lunch.
Lovely with extra fresh coriander and a few thin spring onion strips on top. If you like it spicy, add an extra ring of red chilli or a squeeze of lime just before serving.

- Bring the stock to a boil with the ginger and red pepper.
- Add the chicken strips and gently simmer for 6 minutes.
- Stir in the coconut milk and warm through without boiling.
- Add the pak choi and simmer for 2 minutes.
- Season with lime juice and salt if needed.
