Thai chicken soup with lime and ginger is an aromatic, clear soup that's ready in a quarter of an hour. Fresh ginger and red chilli give the broth instant character, whilst a splash of coconut milk makes the soup just creamy enough. The lime juice adds a fresh, zingy finish at the last moment that lifts all the flavours.

For Phase 1 of the protein diet, this chicken soup is a wise choice. The lean chicken fillet provides over thirty grams of protein per serving and keeps the dish distinctly protein-rich, whilst carbohydrates stay very low at just a handful per bowl. The warm broth and the protein together create a pleasant sense of fullness, ideal for a light but nourishing lunch.

Lovely with extra fresh coriander and a few thin spring onion strips on top. If you like it spicy, add an extra ring of red chilli or a squeeze of lime just before serving.

  1. Bring the stock to a boil with the ginger and red pepper.
  2. Add the chicken strips and gently simmer for 6 minutes.
  3. Stir in the coconut milk and warm through without boiling.
  4. Add the pak choi and simmer for 2 minutes.
  5. Season with lime juice and salt if needed.
  6. Serve with fresh coriander.

Bewaren

Store the soup in the fridge for up to three days and add the lime juice when reheating. Warm gently so the coconut milk doesn't split.

Variatietips

Try stirring through some glass noodles or extra pak choi for more substance, or swap the chicken breast for prawns for a lighter version.
