Thai beef curry with wholegrain rice is a hearty, creamy dish that brightens your evening straight away. Lean beef is seared hard and quick, then braised in a fragrant sauce of green curry paste and light coconut milk, with green beans and peppers adding bite. Fresh basil and a squeeze of lime juice make the curry fresh and aromatic.

In Phase 4 it's all about balanced maintenance, and this curry fits that perfectly. The lean beef delivers a solid dose of protein for muscle maintenance and satisfaction, whilst the wholegrain rice provides slow carbs that keep your energy stable. With fibre-rich veg alongside, this is a complete, nourishing meal that fits within a high-protein diet aimed at the long term.

Lovely with extra fresh coriander or a wedge of lime alongside. A pinch of toasted coconut shavings gives the curry a surprising sweet touch.

  1. Cook the wholemeal rice.
  2. Brown the beef quickly and remove from the pan.
  3. Heat the curry paste and add the coconut milk.
  4. Add the green beans and peppers and cook for 5 minutes.
  5. Return the beef to the pan and season with fish sauce and lime juice.
  6. Serve with the rice and finish with basil.

Bewaren

Store the curry cooled in a sealed container, for a maximum of three days in the refrigerator. The flavour becomes even fuller after a night.

Variatietips

Replace the beef with chicken or pumpkin chunks for a plant-based version. If you like it spicy, add some extra curry paste or a red chilli.
