This stuffed sweet potato with herb quark is comforting yet surprisingly light. The sweet potato is roasted until soft and sweet, filled with savoury lentils dusted with paprika and finished with fresh quark full of parsley. A protein-rich dinner that brings together warmth and nourishment effortlessly.

  1. Preheat the oven to 200 degrees and prick the sweet potato.
  2. Roast the potato for 35 minutes until tender.
  3. Warm the lentils briefly with the paprika powder.
  4. Mix the quark with the parsley and pepper.
  5. Cut the potato open and fill with the lentils and cheese.
  6. Spoon the herb quark over and serve.
