Stuffed portobello with tuna

Stuffed portobello with tuna is a quick, savoury lunch where the meaty mushroom takes the place of bread or base. The hollow caps are filled with a fresh tuna salad of quark and mustard and baked in the oven with a layer of melted cheese.

For Phase 1, this is a godsend, the portobello keeps carbs very low, whilst tuna, quark and cheese together deliver almost forty grams of protein. That makes it a protein-rich lunch that keeps you going surprisingly long, exactly what you want on a protein diet without reaching for the bread tin.

Lovely with a handful of mixed leaves or some strips of pepper and cucumber on the side for a crispy contrast with the soft filling.

  1. Remove the stems from the portobellos and place them hollow side up in a dish.
  2. Mix tuna with quark, mustard, spring onion, salt and pepper.
  3. Divide the tuna salad over the portobello mushrooms.
  4. Sprinkle the cheese over.
  5. Bake for 12 minutes at 200 degrees until the cheese has melted.

Bewaren

The tuna salad tastes best raw and keeps well covered in the fridge for a day. Baked portobello mushrooms are best eaten straight after cooking.

Variatietips

Replace the tuna with boiled eggs or leftover chicken. Some finely chopped celery or gherkin gives the salad extra crunch.
