These stuffed eggs with tuna are a classic that comes back in a new, protein-rich guise. The creamy tuna filling with yoghurt and mustard makes every bite smooth and savoury, whilst fresh chives provide a fresh finish. Make them ahead and you'll have a snack within reach all day.

In Phase 1 it's all about strict protein and as few carbohydrates as possible, and these stuffed eggs deliver that with ease. Eggs and tuna together bring you to 24 grams of protein per serving with just 1 gram of carbohydrates, making them a cornerstone within a serious protein diet. The combination keeps you satisfied for hours, so you don't reach for less favourable snacks.

Delicious with a few lettuce leaves underneath or a pinch of paprika powder over the filling. A sprig of parsley also makes them special enough for the table.

  1. Cook the eggs for 9 minutes until hard boiled, plunge into cold water and peel.
  2. Halve the eggs and scoop the yolks into a bowl.
  3. Mash the yolks with tuna, yoghurt and mustard until smooth.
  4. Fill the egg halves generously and sprinkle with chives and pepper.
  5. Keep chilled until you're ready to take them with you.

Bewaren

Store the filled eggs covered in the fridge and eat them within two days for the best flavour and freshness. Fill them preferably just before you leave, so the filling stays firm.

Variatietips

Replace the tuna with smoked salmon or finely mashed cooked chicken for variety. A pinch of curry powder or a finely chopped gherkin through the filling gives a completely different flavour direction.
