Stuffed eggs with tuna and chives are a timeless party classic, but now in a protein-rich version that feels a bit more substantial and nourishing. The creamy tuna filling with fresh chives gives each egg a savoury, fresh touch, whilst mustard adds a pleasant kick. A bite that looks festive and is ready in no time.

Within Phase 1 of a protein diet, everything revolves around plenty of protein and as few carbohydrates as possible, and these stuffed eggs fit perfectly. The egg and tuna together deliver a good dose of quality protein that supports your muscles and keeps you satisfied for longer, so you won't reach for something else straight after the party. With just a few grams of carbohydrates per serving, you'll stay effortlessly within the guidelines of this low-carb phase.

Lovely with a handful of cucumber strips, a few slices of radish or a fresh celery stick alongside for extra crunch. Also delicious as a protein-rich snack or as part of an extended party platter.

  1. Boil the eggs for 9 minutes until hard and shock them under cold water.
  2. Peel the eggs, halve them and scoop the yolks into a bowl.
  3. Mash the yolks with the drained tuna, yoghurt and mustard into a smooth filling.
  4. Season with salt, pepper and half of the chives.
  5. Fill the egg halves with the mixture and sprinkle with the remaining chives.

Bewaren

Keep the filled eggs covered in the refrigerator and eat within 24 hours for the best flavour and freshness. You can keep the filling separate and fill the eggs just before serving if you prefer.

Variatietips

Replace the chives with finely chopped dill or parsley, or add a spoonful of finely chopped gherkin for extra bite. A pinch of curry or paprika powder gives the tuna filling a warm, spicy twist.
