- Hollow out the aubergine and finely chop the flesh.
- Fry the minced beef with garlic, add the aubergine flesh, tomatoes and oregano.
- Stir in the white beans and season to taste with salt and pepper.
- Fill the aubergine halves with the mixture and sprinkle with cheese.
- Bake for 30 minutes at 190 degrees until the aubergine is soft.
