  1. Pat the sirloin dry and season with salt and pepper.
  2. Fry the sirloin in half the butter for 2 to 3 minutes per side and rest under foil.
  3. Melt the remaining butter and fry the mushrooms until golden brown.
  4. Add the garlic and thyme and fry briefly.
  5. Stir in the crème fraîche and let reduce slightly.
  6. Slice the sirloin and serve with the creamy mushrooms.

Store leftovers covered in the fridge and eat within two days. Reheat the steak gently so it doesn't become tough.

Variatietips

Swap the mushrooms for chestnut mushrooms and shiitake for extra depth. A splash of mustard through the sauce gives a spicy twist.
