Spicy chicken curry with courgette

This spicy chicken curry with courgette is a fragrant one-pan meal full of tender chicken and vegetables. The red curry paste and coconut milk together form a creamy, spiced sauce, whilst courgette ribbons replace rice and keep the dish beautifully light. Fresh coriander makes every bite fresh and aromatic.

For Phase 1, this is exactly what you're looking for: a dish packed with protein thanks to a generous portion of chicken breast and at the same time contains barely any carbohydrates. The courgette replaces starchy side dishes and together with the chicken provides a hearty, satisfying plate. This curry fits effortlessly into a protein diet without leaving you hungry.

Lovely with an extra wedge of lime for fresh tartness and some toasted sesame seeds sprinkled over. If you like heat, add a finely sliced red chilli just before the courgette goes in the pan.

  1. Brown the chicken pieces on all sides in a wok.
  2. Add the onion and garlic and stir-fry briefly.
  3. Stir in the curry paste until fragrant.
  4. Pour in the coconut milk and stock and simmer for 10 minutes.
  5. Add the courgette ribbons and warm through for 3 minutes until al dente.
  6. Scatter with coriander and serve.

Bewaren

Keep the curry covered in the fridge for up to 2 days. The courgette will soften a bit when stored, so warm the curry briefly over a low heat.

Variatietips

Try swapping the chicken for prawns or firm white fish. With green curry paste or a handful of spinach stirred through the sauce, you get a slightly different dish each time.
