This soy yoghurt berry pudding with protein is a refreshing dessert where sweet and creamy come together. The mixed berries add colour and natural sweetness, whilst the chia seeds thicken the soy yoghurt into a lovely, pudding-like texture.

In Phase 4, it's all about balanced maintenance, and this dessert fits beautifully there. The plant-based protein powder and soy yoghurt together provide well over twenty grams of protein, which gives you fullness and supports your muscles, whilst the berries and a touch of maple syrup provide considered carbohydrates. So you enjoy something sweet within the framework of a vegan, protein-rich diet.

Lovely with an extra handful of chopped almonds or some toasted coconut flakes sprinkled on top. A few mint leaves finish the dessert off refreshingly.

  1. Stir the protein powder and chia seeds through the soya yoghurt.
  2. Let the mixture set in the fridge for 10 minutes.
  3. Stir the maple syrup through.
  4. Top with berries and sprinkle with almonds.
  5. Serve straight away or keep chilled until ready to use.

Bewaren

Store the pudding covered in the fridge for up to 2 days. Add the almonds just before serving so they stay crispy.

Variatietips

Ring the changes with mango or pomegranate instead of berries. An extra layer of chia seeds makes a beautiful layered parfait.
