Smoked salmon toasts on wholemeal are an elegant party bite that looks sophisticated but is surprisingly simple to make. Silky slices of smoked salmon rest on a crispy wholemeal toast with a fresh layer of dill cream cheese, finished with a hint of lemon. A refined bite that is ready in no time.

In Phase 3 of a protein diet, wholemeal products come back into view in moderation, and these toasts make clever use of them. The smoked salmon delivers high-quality protein and healthy omega-3 fats, whilst the wholemeal bread adds slow-release carbohydrates and fibres that give you a longer-lasting feeling of fullness. That combination of protein and complex carbohydrates fits perfectly with the gradual build-up that this phase aims for, so you can enjoy a protein-rich bite without disrupting the balance.

Lovely with a few thin slices of cucumber, some capers or a fresh rocket salad alongside. Also suitable as a refined lunch with a bowl of soup on the side.

  1. Mix the cream cheese with the dill, lemon juice and pepper.
  2. Cut each wholegrain toast slice into two triangles.
  3. Spread the toast slices with a layer of dill cream cheese.
  4. Drape a slice of smoked salmon on each toast.
  5. Garnish with some extra dill and serve immediately.

Bewaren

Top the toasts just before serving, otherwise they will become soft. Keep the dill cream cheese and salmon covered separately in the refrigerator and use within two days.

Variatietips

Replace the dill with finely chopped chives or add grated lemon zest for extra freshness. A thin slice of smoked trout or mackerel works just as well as a luxury alternative to the salmon.
