Smoked mackerel with cucumber salad

Smoked mackerel with cucumber salad combines the rich, smoky flavour of fatty fish with a fresh, crispy salad. The cool cucumber and a yoghurt dressing with dill bring balance to the full-flavoured mackerel, making the dish feel light. In ten minutes you have a complete lunch without needing to use the pan.

For Phase 1 of the protein diet, this combination is ideal. With 28 grams of protein and just 5 grams of carbohydrates you stay nicely within the low-carb guidelines. The healthy omega-3 fats from the mackerel provide lasting satiety, whilst the protein supports your muscles during this strict phase.

Lovely with a few leaves of little gem or a handful of radishes for extra crunch. If you fancy it, finish the plate with a pinch of lemon zest to enhance the fresh note even more.

  1. Slice the cucumber into thin half slices and place in a bowl.
  2. Mix the yoghurt with dill, vinegar, salt and pepper to make a dressing.
  3. Toss the dressing through the cucumber.
  4. Break up the mackerel and place on the salad.
  5. Sprinkle with a little extra pepper and serve.

Bewaren

Store the cucumber salad and mackerel separately covered in the fridge for a maximum of two days. Mix the dressing just before serving so the cucumber doesn't become watery.

Variatietips

Try replacing some of the cucumber with grated fennel for an anise-sweet twist. A spoonful of horseradish through the dressing gives the mackerel a peppery counterpoint.
