This salad with smoked duck, lamb's lettuce and walnuts is chic and surprisingly simple. Thin slices of smoky duck breast rest on fresh lamb's lettuce, with roughly chopped walnuts and a dressing of walnut oil and apple vinegar that gives everything a refined, nutty depth.

  1. Loosely spread the lamb's lettuce over a plate.
  2. Arrange the slices of smoked duck and cucumber between the leaves.
  3. Roughly chop the walnuts and sprinkle them over the salad.
  4. Whisk the walnut oil with the apple vinegar to make a dressing.
  5. Drizzle the dressing over the salad and grind some pepper over it.
  6. Serve immediately so the duck stays at room temperature.

Best to enjoy this dish fresh, as the duck and mixed leaf salad are at their best straight after preparation. If needed, store the components separately in the fridge for up to 1 day and bring together just before serving.
