In Phase 2 you can easily add a bit more vegetables, and this omelette makes clever use of that. The combination of eggs and quark delivers a hefty dose of protein, whilst the vegetables bring hardly any carbohydrates. - Heat the olive oil in a frying pan and briefly cook the spinach until wilted.

- Fold the omelette in half, let it cook for another minute and serve immediately.
