This savoury quark omelette with spinach and feta is a light start to your day, where creamy lean quark provides a sturdy, high-protein base. Fresh spinach and a handful of crumbled feta deliver a full, savoury flavour that suits a serious protein diet.

In Phase 2 you can easily add a bit more vegetables, and this omelette makes clever use of that. The combination of eggs and quark delivers a hefty dose of protein, whilst the vegetables bring hardly any carbohydrates. This keeps you satisfied for longer and helps you sail through the morning without hunger.

Lovely with a few slices of cucumber or tomato alongside, or a small pot of lean yoghurt for extra protein. Those who want a bit more can add a bowl of fresh herbal tea for a complete, light start.

  1. Whisk the eggs with the cottage cheese, pepper and salt until smooth.
  2. Heat the olive oil in a frying pan and briefly cook the spinach until wilted.
  3. Pour the egg mixture over the spinach and cook over a low heat until the base is set.
  4. Crumble the feta and scatter the spring onion over the top.
  5. Fold the omelette in half, let it cook for another minute and serve immediately.

Bewaren

Eat the omelette preferably straight after cooking. Keep any leftovers covered for a maximum of 1 day in the fridge and reheat briefly in the pan.

Variatietips

Replace the feta with lean goat cheese or add smoked salmon pieces for extra protein. A pinch of nutmeg through the spinach gives a warm, savoury twist.
