Hearty sauerkraut bake with a little potato, lean ham and quark, suitable for Phase 2.
A creamy sauerkraut bake without heavy cream or thick roux: lean quark makes this dish wonderfully moist, whilst lean back ham provides plenty of protein and savoury flavour. The fresh sauerkraut, a hint of mustard and a pinch of nutmeg give the whole thing that typical, uplifting depth. Dutch winter fare in a refined, light jacket.
Phase 2 offers room for a little potato, and this dish distributes protein and carbohydrates in a pleasant balance. The ham and quark together deliver thirty-eight grams of protein, which keeps you full, whilst the modest potato provides just enough slow energy. This way this meal stays completely in line with your high-protein diet without you missing anything.
Lovely with a teaspoon of wholegrain mustard alongside and some freshly ground pepper. A handful of steamed carrots adds colour and sweetness to the plate.

- Boil the potato until tender in fifteen minutes and drain.
- Warm the sauerkraut briefly in a pan.
- Mash the potato with the quark, mustard and nutmeg.
- Stir through the sauerkraut and ham.
- Season with pepper and serve warm.
