This salmon poke bowl with edamame is a colourful bowl brimming with fresh flavours and textures. Tender, lightly marinated salmon meets crispy edamame, creamy avocado and gently roasted sweet potato. With soy sauce, sesame oil and a handful of sesame seeds, the bowl gets an umami-rich finish that lingers on your palate.
In Phase 2 of the protein diet, there's room for healthy carbohydrates, and the sweet potato delivers them here in a responsible way. With 34 grams of protein from the salmon and 24 grams of carbohydrates, you'll maintain a lovely balance. - Preheat the oven to 200 degrees and roast the sweet potato for 15 minutes until tender.
- Mix the salmon cubes with soy sauce and sesame oil and leave to marinate briefly.
- Fry the salmon cubes quickly in a hot pan, about 2 minutes.
- Cook the edamame until just tender according to the packet instructions.
- Arrange sweet potato, edamame, avocado and salmon in a bowl.
- Sprinkle with sesame seeds and serve.
