Salmon Fillet with Lentils and Roasted Broccoli

This salmon fillet with lentils and roasted broccoli is a warming dinner that combines flavour and nutrition effortlessly. Creamy oven-baked salmon, crispy roasted broccoli and earthy lentils come together to form a rich, protein-rich plate that fits perfectly with your protein diet.

In Phase 2 lentils can take centre stage again, and they play a leading role in this dish. The pulses deliver plant-based proteins and fibre that bring just enough carbs for the combo phase, whilst the oily salmon provides high-quality protein and healthy omega 3 fats. That combination keeps you satisfied for a long time after eating.

Lovely with a few wedges of lemon to squeeze over the salmon and a dollop of mustard or yoghurt dressing. Some fresh dill or parsley rounds off this dinner plate perfectly.

  1. Preheat the oven to 200 degrees.
  2. Toss the broccoli with the olive oil, garlic, pepper and salt and spread out on a baking tray.
  3. Place the salmon fillet alongside and roast everything for 18 to 20 minutes in the oven.
  4. Warm the lentils meanwhile briefly in a saucepan.
  5. Spoon the lentils onto a plate, place the salmon and broccoli alongside and serve with lemon wedges.

Bewaren

Store leftovers covered in the fridge for up to 2 days. Warm the salmon and lentils gently in the pan or microwave, and preferably toast the broccoli briefly for maximum bite.

Variatietips

Swap the salmon for mackerel or a firm white fish, and swap the broccoli for cauliflower or green beans. A pinch of cumin through the lentils adds a warm, spicy note.
