Roast beef rolls with horseradish cream are a refined cold lunch you make in five minutes without a pan or oven. Soft slices of roast beef envelop a creamy sauce with a spicy horseradish kick, alternated with fresh strips of cucumber. Elegant, light and surprisingly flavourful for so little effort.

For Phase 1, this is a clever choice because the roast beef is lean and rich in protein, whilst the cucumber and cream cheese keep carbohydrates low. This makes it a truly protein-rich dish that effortlessly fits into a protein diet. The protein and fresh filling provide pleasant satiety without feeling heavy after lunch.

  1. Mix the cream cheese with the horseradish and chives until smooth.
  2. Spread a thin layer of the cream mixture on each slice of roast beef.
  3. Place a few cucumber sticks on each slice.
  4. Roll the slices up tightly.
  5. Sprinkle with black pepper and serve chilled.

Store the wraps covered in the fridge and eat the same day for best freshness. Storing the cucumber separately prevents moisture.
