Quark tarts with berries

Individual quark tarts with wholemeal base and berries, delicious within Phase 3.

These quark tarts with berries are individual little puddings with a crispy wholemeal base and creamy quark filling. Fresh berries on top add colour and a pleasant tangy note. Elegant to serve and yet surprisingly nutritious, ideal for a refined moment.

In Phase 3 of your protein diet there is room for more substantial carbohydrates, and these tarts make clever use of that. The wholemeal base and oats deliver fibre-rich, slow carbohydrates, whilst the lean quark, eggs and vanilla protein powder provide twenty grams of protein per tart. That balance of protein and slow carbohydrates keeps you satisfied for a long time, so this protein-rich pudding sits perfectly within the rhythm of Phase 3 without becoming heavy.

Lovely with a dollop of lean quark or a thin layer of sugar-free fruit compote, and some extra fresh berries alongside.

  1. Preheat the oven to 170 degrees and grease six muffin tins.
  2. Mix wholemeal flour with oats and a spoonful of honey until breadcrumbs form and press into the base of the tins.
  3. Whisk the quark with the eggs, protein powder, cornflour and remaining honey.
  4. Divide the quark filling over the bases.
  5. Bake for 25 minutes until the filling is firm.
  6. Cool and top with the mixed berries.

Bewaren

Store the tarts covered for up to three days in the fridge. Best garnish the berries just before serving so the base stays crispy.

Variatietips

Use raspberries, cherries or strawberries instead of mixed berries. A spoonful of lemon zest through the quark filling gives a fresher flavour.
