Protein-rich tzatziki with cucumber

This protein-rich tzatziki with cucumber is a fresh Greek classic in a smarter guise. By stirring a spoonful of lean quark through the yoghurt, the dip gets extra body and a full, creamy texture. The grated cucumber, garlic and dill make it a cool refreshment that lifts any dish.

Zo maak je het

  1. Grate the cucumber and squeeze out the liquid well.
  2. Mix the yoghurt and quark smooth in a bowl.
  3. Stir in the cucumber, garlic and dill.
  4. Season with olive oil and salt and chill briefly.

Bewaren

Store the tzatziki covered in the fridge and consume it within two days. Drain any liquid that has separated before serving.

Variatietips

Add some fresh mint alongside the dill for an extra fresh twist. If you like heat, stir a pinch of cayenne pepper through it.
