Protein porridge with vanilla and berries

Creamy high-protein porridge with vanilla and a handful of berries, fitting for Phase 2.

This protein porridge with vanilla and berries is a warm, sweet bowl of comfort that's ready in a couple of minutes. Based on vanilla protein powder, ground linseeds and almond flour, the porridge becomes wonderfully creamy, whilst fresh blueberries and a pinch of cinnamon add just that fruity top note.

In Phase 2 you're allowed to deliberately include a bit more carbohydrates, and this porridge does that cleverly: the berries and linseeds deliver slow carbs and fibre, whilst the protein powder provides nearly thirty grams of protein per serving. That balance between protein, fibre-rich carbs and healthy fats makes the porridge long-lasting in its fullness and a natural choice within a high-protein diet that gradually opens up space for carbohydrates again.

Lovely with an extra handful of raspberries or a spoonful of lean quark on top, and optionally a few chopped almonds for a bit of crunch.

Zo maak je het

  1. Gently warm the almond milk in a saucepan without boiling.
  2. Stir in the flaxseed and almond flour and let it thicken for a minute.
  3. Remove from heat and whisk the protein powder through smoothly.
  4. Spoon the porridge into a bowl.
  5. Top with the blueberries and a pinch of cinnamon.

Bewaren

The porridge is best eaten fresh, as protein powder thickens the longer it sits. Store any leftovers covered in the fridge for half a day and loosen with a splash of almond milk.

Variatietips

Use strawberries or blackberries instead of blueberries, or swap the almond flour for desiccated coconut. A drop of vanilla extract rounds out the flavour nicely.
