Protein pancakes with cinnamon

Sweet pancakes without the carbohydrates. A lovely Phase 1 treat for breakfast.

  1. Mix the pancake mix with water or milk until you have a smooth batter.
  2. Stir in the cinnamon and sweetener.
  3. Heat a non-stick pan over medium heat.
  4. Cook small pancakes until golden brown on both sides.
  5. Serve warm, optionally with a spoonful of lean quark.

Bewaren

Keep the pancakes cooled in the fridge for a maximum of 2 days or stack them in the freezer with baking paper between each one. Warm briefly in a dry pan.

Variatietips

Add a pinch of vanilla to the batter or work in some mashed banana for a natural sweetness. A dollop of lean yoghurt makes them even creamier.
