A light stack of Bioteïne Protein Pancake with quark and a handful of berries, low-carb tuned for Phase 1.

This pancake stack is all about the Bioteïne Protein Pancake, which you simply mix with egg and a splash of water to make a thick, protein-rich batter. By using only the mix you keep the carbohydrate content low whilst the protein stays well within Phase 1 guidelines.

Phase 1 is the most carbohydrate-restricted phase of the Bioteïne programme. We therefore skip sugar and sweet toppings and opt for creamy fat-free quark and a modest handful of fresh berries, so you feel satisfied without pushing carbohydrates up. The stack stays well under 330 kilocalories this way.

Serving tip: make the pancakes small and stack them with a layer of quark between each for a nice tower presentation. A pinch of cinnamon over the top adds just a touch of warmth to the flavour.

  1. Whisk the Bioteïne Protein Pancake with the egg and water until a smooth, thick batter forms.
  2. Heat the coconut oil in a frying pan over medium-high heat.
  3. Cook four small pancakes until golden brown, flipping as you go.
  4. Stack the pancakes with a spoonful of curd cheese between each one.
  5. Dollop the remaining curd cheese on top and scatter the blueberries.
  6. Sprinkle with a pinch of cinnamon and serve immediately.

It's best to prepare the batter fresh. Cooked pancakes keep well in the fridge for 2 days when covered, and you can warm them briefly in a dry pan.

Variatietips

Replace the blueberries with raspberries or add a few drops of vanilla extract to the batter for a sweeter taste without extra carbohydrates.
