Protein pancake with blueberries

Start your day right with these fluffy protein pancakes with blueberries. The light, airy pancakes made from egg, quark and protein powder are finished with fresh blueberries and crispy almond flakes, for a breakfast that is both filling and surprisingly flavourful.

These pancakes fit nicely within Phase 2, where a little fruit and healthy fats have room again. With thirty grams of protein from egg and protein powder, they align perfectly with a protein diet, whilst the blueberries provide just enough carbohydrates and the almonds add a dose of good fats. That combination keeps you satisfied for longer and provides steady energy through the morning.

Lovely with a spoonful of lean quark in between or a small splash of sugar-free syrup for anyone who wants it a little sweeter.

  1. Mix the eggs, quark, protein powder and baking powder into a smooth batter.
  2. Heat a non-stick pan over medium-high heat.
  3. Cook small pancakes until golden on each side, a couple of minutes per side.
  4. Stack them up and garnish with blueberries and flaked almonds.

Bewaren

The pancakes keep well for 2 days in a sealed container in the fridge. They freeze beautifully, then warm them briefly in a pan or toaster.

Variatietips

Swap the blueberries for raspberries or strawberry pieces for a different fruit accent. A pinch of cinnamon or vanilla in the batter takes the flavour to the next level.
