These protein biscuits with peanut butter are soft, nutty and wonderfully fragrant with a hint of cinnamon. They don't crumble away but stay chewy, exactly as a good protein biscuit should be. Ideal to take with you or as a quick bite after a workout.

In Phase 2 of your protein diet there's room again for more slow carbohydrates, and these biscuits balance that nicely. The oats provide easily digestible energy, while the peanut butter, vanilla protein powder, egg and quark together provide sixteen grams of protein per biscuit. That mix of protein and healthy fats keeps you satisfied for longer, so this high-protein snack helps you avoid snacking between meals. A handy treat that fits seamlessly into Phase 2.

Lovely with a glass of cold almond milk or a cup of coffee, and optionally a thin layer of extra peanut butter on top.

  1. Preheat the oven to 175 degrees and line a baking sheet.
  2. Mix the peanut butter with the egg, quark and stevia.
  3. Add oatmeal, protein powder, baking powder and cinnamon.
  4. Knead into a cohesive dough and shape eight little balls.
  5. Press the balls flat on the baking sheet to make biscuits.
  6. Bake for 12 minutes until light golden and allow to cool.

Bewaren

Keep the biscuits in an airtight tin at room temperature for up to five days. For longer storage, freeze them individually.

Variatietips

Press a few dark chocolate chips into the biscuits for extra indulgence. Almond or cashew butter works just as well as peanut butter for a different nut flavour.
