This oven stew with chicken and sweet potato is convenience in its finest form: everything goes into the oven together and comes out with a roasted, caramelised edge. Tender chicken thigh fillet, sweet potato, peppers and cherry tomatoes get full flavour from smoked paprika powder and thyme. Minimal washing up, maximum enjoyment.

For Phase 4, the maintenance phase, it's all about balance, and this oven stew delivers that perfectly. The chicken provides a generous protein portion, whilst the sweet potato offers slow carbohydrates and fibre that keep your energy stable. That balanced ratio makes it an ideal dish to maintain your protein-rich protein diet relaxed, with full flavour and lasting satisfaction.

Lovely with a spoonful of lean yoghurt or tzatziki and some fresh parsley over the top. A fresh green salad alongside completes this oven dish entirely.

  1. Preheat the oven to 200 degrees.
  2. Mix the chicken, sweet potato, pepper, onion and garlic in a roasting tin.
  3. Toss through the olive oil, paprika powder and thyme.
  4. Roast for 30 minutes in the oven.
  5. Add the cherry tomatoes and roast for a further 12 minutes.
  6. Season to taste and finish with parsley.

Bewaren

Store the oven stew for up to 3 days covered in the fridge and reheat in the oven or pan so the edges stay crispy. You can freeze it for up to 2 months.

Variatietips

Replace the chicken thigh fillet with chicken breast for a leaner version. A handful of olives or some crumbled feta on top gives it a Mediterranean twist.
