This one-pan salmon with quinoa and spinach is ready in eighteen minutes and requires minimal washing up. Pink salmon chunks cook together with garlic, fresh spinach and pre-cooked quinoa, finished with a squeeze of lemon juice for a fresh, complete meal from a single pan.

In Phase 3, wholemeal carbohydrates in moderation are permitted, and this protein-rich dish makes good use of that allowance. The salmon provides high-quality protein and healthy fats, whilst the quinoa adds plant-based protein, fibre and slow-release carbohydrates. That combination keeps you feeling full for longer and aligns closely with the principles of a protein diet in this phase.

Lovely with a spoonful of dill quark on the side or a few lemon wedges nearby.

  1. Heat the olive oil in a frying pan over medium heat.
  2. Fry the salmon chunks with garlic until cooked through, about 5 minutes.
  3. Add the spinach and let it wilt for 2 minutes.
  4. Stir through the quinoa and warm for 3 minutes.
  5. Drizzle with lemon juice and pepper, then serve.

Store leftovers covered in the fridge and eat them within a day. Warm through gently so the salmon stays tender and juicy.

Variatietips

Replace the salmon with trout or the quinoa with wholemeal couscous. A handful of pine nuts adds extra crunch and flavour.
