Noodle bowl with beef and bok choy is a quick wok packed with umami. Lean beef is briefly seared over high heat with garlic and ginger, then bok choy and wholemeal noodles are tossed in a fragrant soy glaze. Sesame seeds and spring onion give the finishing touch to this hearty Asian plate that hits the table in fifteen minutes.

In Phase 4 it's all about sustainable balance, and this noodle bowl fits right in. The wholemeal noodles deliver complete carbohydrates and fibre, whilst the lean beef provides around 36 grams of protein.   1. Cook the noodles al dente and drain well.
  2. Stir-fry the beef on high heat in the sesame oil briefly.
  3. Add the garlic and ginger and fry for half a minute.
  4. Stir in the pak choi until it just wilts.
  5. Add the noodles and soy sauce and toss everything well.
  6. Top with spring onion and sesame seeds and serve straight away.

Bewaren

Store covered for up to two days in the fridge. Reheat quickly in a hot wok or pan so the noodles don't become too soft.

Variatietips

Swap the beef for strips of chicken or prawns, and the pak choi for pointed cabbage or broccoli. A pinch of chilli flakes adds extra kick.
