Mussels in light tomato sauce

Mussels in light tomato sauce are a fun dish to eat with your fingers and a spoon. The mussels steam open in a spiced sauce of tomato, garlic, onion and thyme, finished with fresh parsley. A steaming pan full of flavour that you'll happily lap up from the bowl, and surprisingly simple to prepare.
For Phase 2 of the protein diet, mussels are a smart choice. With 30 grams of protein and 18 grams of carbohydrates, mostly from the vegetables and tomato, you get a protein-rich meal with just enough healthy carbohydrates. The lean shellfish satisfy well without being heavy, ideal for this phase with more room to play with.
Lovely with a few spoonfuls of the sauce to lap up or a fresh green salad on the side. If you want something more substantial, dip a small piece of wholemeal bread in to soak up the last of the sauce.

- Rinse the mussels well and discard any open ones.
- Sauté the onion and garlic in olive oil until translucent in a large pan.
- Add the chopped tomatoes and thyme and simmer for 5 minutes.
- Add the mussels, cover the pan and steam them for 6 to 8 minutes until they open.
- Sprinkle with parsley and serve in a deep bowl.
