  1. Fry the chicken chunks in the olive oil for 8 minutes until cooked and season with salt and pepper.
  2. Let the chicken cool slightly.
  3. Thread chicken, cherry tomato, a basil leaf and mozzarella alternately onto small skewers.
  4. Arrange the skewers on a plate and serve immediately or keep cool.

Bewaren

Keep the skewers covered in the refrigerator and eat within 24 hours. You can keep the chicken separate from the tomato and mozzarella and assemble the skewers just before serving.

Variatietips

Replace the chicken with chunks of turkey fillet or grilled prawns for a different protein source. A thin strip of courgette or a rocket leaf between the pieces gives the skewers extra freshness.
