This mince dish is a nod to English cottage pie, but in a lighter version. Beneath a fluffy layer of creamy cauliflower puree lies a savoury base of lean mince, lentils and vegetables. Sprinkled with a little cheese, the dish comes out of the oven golden and fragrant, ready to treat the whole family.
In Phase 2 pulses can carefully return, and this protein-rich dish makes clever use of this. The lean beef mince and lentils together deliver a nice helping of protein and the lentils bring a modest amount of good carbohydrates and fibre for extra satisfaction. The cauliflower puree replaces the potatoes and keeps the whole thing light. A dish that fits perfectly with this phase of your protein diet.
Lovely with a handful of steamed green vegetables like broccoli or green beans, or a fresh salad alongside. A splash of Worcestershire sauce through the mince gives just that extra bit of depth.

- Preheat the oven to 200 degrees and cook the cauliflower until tender.
- Fry the onion, carrot and mince until browned and stir in the tomato puree, tinned tomatoes and lentils.
- Let the mixture simmer gently for 10 minutes and season to taste.
- Blend the cauliflower with milk, salt and pepper until a smooth puree.
- Spoon the meat mixture into a baking dish and top with the cauliflower puree.
- Sprinkle with cheese and bake for 20 minutes until golden.
