This mince bake with sweet potato is comforting comfort food from the oven. Beneath a golden layer of creamy sweet potato mash hides spicy mince with carrot, peas and tomato. With a bit of cheese on top, the bake comes to the table bubbling and fragrant, a real family favourite that's ready without any fuss.
From Phase 3 onwards, carbohydrates can return in moderation, and this protein-rich dish uses that space cleverly. The lean beef mince provides a generous serving of protein that keeps you satisfied for longer, whilst the sweet potato adds a responsible amount of slow-release carbohydrates and natural sweetness. Together with the vegetables you get a balanced plate that fits perfectly within your protein diet in this phase.
Lovely with a handful of steamed broccoli or green beans, or a fresh green salad on the side. A dash of Worcestershire sauce or a pinch of thyme through the mince gives that little bit of extra flavour.

- Preheat the oven to 200 degrees and cook the sweet potato until tender.
- Fry the onion, carrot and mince until crumbly and add the tomato puree and tinned tomatoes.
- Stir in the peas and simmer for 5 minutes.
- Blend the sweet potato with milk, salt and pepper.
- Spoon the meat mixture into a baking dish and cover with the puree and cheese.
- Bake for 20 minutes until the top is golden brown.
