Mustard and a touch of breadcrumbs keep the ball firm and flavourful, whilst crispy green beans and a small potato round out the plate. In Phase 2, you can enjoy a little potato again, and this meatball makes good use of that allowance. The lean mince delivers a hefty forty grams of protein, which feeds your muscles and keeps you satisfied for hours, whilst the small portion of potato and green beans keep carbs nicely in balance. A dish that combines comfort with your high-protein diet with ease.
Lovely with a spoonful of the light gravy spooned over everything and some extra steamed veg of your choice. A small bowl of apple compote adds a nostalgic, sweet touch.

- Mix the mince with breadcrumbs, egg, mustard, pepper and salt and roll into a ball.
- Brown the meatball all over in a dry non-stick pan.
- Pour in the stock and simmer gently for twenty minutes.
- Meanwhile, cook the green beans and potato until tender.
- Lightly thicken the gravy if desired and serve everything together.
