This light quark mousse with vanilla and blueberry is a refined dessert that is both light and creamy. Lean quark is whipped with vanilla and stevia into a soft mousse, after which stiffly beaten egg white creates a cloud-like texture. A handful of fresh blueberries provides a fresh counterpoint to the sweet vanilla.

Why this recipe fits Phase 1: in this phase it's all about plenty of protein and few carbohydrates, and with twenty-two grams of protein and just eight grams of carbohydrates per serving, this dessert sits just right. The quark and egg whites deliver lean protein that satisfies, whilst the small amount of fruit keeps the carbohydrates low. So you get to enjoy something sweet that still fits completely within the protein diet.

Complete it with a sprinkle of grated lemon zest or a few fresh mint leaves. Those who love texture can add an extra spoonful of blueberries just before serving.

  1. Stir the cottage cheese until smooth with the vanilla extract and stevia.
  2. Whip the egg whites in a clean bowl until stiff.
  3. Gently fold the stiff egg whites through the cottage cheese until a light mousse forms.
  4. Divide the mousse between two glasses.
  5. Scatter the blueberries over and chill for at least 15 minutes before serving.

Bewaren

The quark mousse keeps well covered in the fridge for two days and gains firmness as it gets cooler. Freezing is not recommended as the whipped egg white will collapse.

Variatietips

Replace the blueberries with raspberries or strawberry pieces. For a chocolate variant, you can stir a teaspoon of unsweetened cocoa powder through the quark instead of vanilla.
