Light hutspot with celeriac and lean beef mince

Hutspot like it used to be, but in a light version you can serve yourself without guilt. Celeriac replaces the potato and lean beef mince provides a hearty, savoury base. Carrot and onion give the familiar sweet note, whilst a pinch of nutmeg completes it all. Real Dutch mash, completely tailored to a high-protein eating pattern.

In Phase 1 you want to limit carbohydrates and put protein first, and this light hutspot does that effortlessly. The celeriac keeps carbohydrates low and the lean beef mince delivers forty grams of protein per serving. Those proteins keep you full for a long time, so this phase of the protein diet feels pleasant and satisfying.

Lovely with a spoonful of mustard or some gherkin alongside for a fresh, sour counterpoint. A handful of steamed green beans further rounds out the plate.

  1. Boil the celeriac and carrot until tender in fifteen minutes.
  2. Meanwhile, fry the mince with the onion until crumbly and well-seasoned.
  3. Drain the veg and mash with a splash of stock and nutmeg.
  4. Season with pepper and salt.
  5. Stir the mince through or serve it on top of the mash.

Bewaren

Store the hotchpotch covered for a maximum of two days in the fridge. Reheat gently in a pan with a splash of stock to prevent it from drying out.

Variatietips

Replace the beef mince with lean turkey mince for a lighter version. Mashed plantain is best avoided in Phase 1, but extra carrot is fine for added sweetness.
