- Preheat the oven to 190 degrees and cook the sweet potato slices for 5 minutes until just tender.
- Fry the onion, garlic and chicken mince until crumbly and stir in the passata and oregano.
- Let the sauce simmer for 10 minutes and season to taste.

- Top with mozzarella and bake for 35 minutes until golden brown.
- Let rest briefly and cut into portions.
